Shiitake Bacon BLT

YIELD Serves 2

TIME 40 minutes

INGREDIENTS

For making the bacon:

  • 1/2 lb thinly sliced organic shiitake mushrooms (the thinner the better)

  • Olive oil spray

  • 1/4 tsp liquid smoke

  • 1/2 tsp sea salt

  • freshly ground black pepper to taste

For making the sandwich:

  • 4 pieces of bread

  • 1 Tomato

  • Mayo to taste

INSTRUCTIONS

  • Preheat oven to 375 degrees F

  • Combine the bacon ingredients in a bowl, and mix.

  • Spray oil over the mushrooms, and mix until all mushrooms are lightly coated. Don’t overspray, or you’ll get soggy, oily mushrooms!

  • Spread mushrooms across a lined cookie sheet in a single layer

  • Cook for about 30 minutes, stirring frequently with a spatula until lightly browned and crisp.

  • Compile your BLT to your personal preference, just be sure to use the good tomatoes!
