Crispy Buttermilk-fried Oyster Mushrooms

INGREDIENTS

For making the bacon:

  • 2 cups (10-12 oz.) Oyster Mushrooms (2 big clusters)

  • 1 cup buttermilk (or vegan buttermilk: combining 1 ½ Tbsp lemon juice + 1 ½ cups plain soy milk)

  • 1.5 cups all-purpose flour

  • Seasoning Mix: 1 tsp. each of flaky salt, pepper, garlic powder, onion powder, smoked paprika, and cumin

  • 1 tbsp oil of choice

  • 1/2 tsp liquid smoke

  • 1/2 tsp. salt

  • freshly ground black pepper to taste

  • preferred dipping sauce

  • Preferred oil for frying

INSTRUCTIONS

  • Preheat your air fryer to 375 degrees Fahrenheit.

  • Separate the Oyster mushrooms and coat each mushroom with buttermilk. Let them sit while you prep the breading.

  • Combine dry ingredients in a separate bowl. Spoon the mushrooms into the flour mixture, then repeat those steps (buttermilk and breading again.)

  • Add to a well-greased pan, and air fry in a single layer. Leave space between the mushrooms for maximum crispness. Cook for 5 minutes, brush with oil, then flip and cook for 5-10 more minutes or until golden brown and crispy.

  • Serve immediately with the dipping sauce of your choice.
