Korean N' Herb Pink Oyster Mushroom Sliders from Down with Daishu

YIELD Serves 4

TIME 30 minutes

INGREDIENTS

  • 1 lb Freshly Harvested Pink Oyster Mushrooms

  • 4-6 slider buns

  • 8oz Sprouts (your choice)

  • 3 1/2 cups flour

  • 1 cup panko bread crumbs

  • 4 cups oat milk

SAUCE

  • 1/2 cup soy sauce or coconut aminos

  • 2 tsp Gochujng paste

  • 1 tbsp Minced Garlic

  • 1 tsp Gingr power

  • 1/3 cup agave syrup

  • 1 tbsp sesame oil

    Whisk together & enjoy!

HERB MIX

  • Finely chopped: cilantro, parsley, shallots, garlic, sweet peppers

  • + 1/2 cup olive oil

  • pinch of salt

  • pepper

    Mix & enjoy!

WET BATTER

  • 1/2 cup flour

  • 1 cup oat milk

  • 2 tsp hot sauce

  • 1 tsp garlic powder

  • 1 tsp onion

DRY MIX

  • 1 cup panko

  • bread crumbs

  • 1 cup flour

  • 1 tsp pepper

  • 1 tsp garlic powder


INSTRUCTIONS

Add oil to a frying pan and heat on medium.

In separate bowls, mix dry ingredients, then wet ingredients.

Dip your oyster mushrooms into wet batter, then dry. Repeat process. Fry 6-8 minutes, until golden brown.

Drizzle sauce and sprinkle black sesame seeds. Enjoy!
