Ingredients
Burger

8 oz Lion’s Mane mushrooms, finely chopped

1 can (15 oz) black beans, drained and mashed

½ small onion, diced

2 cloves garlic, minced

1 egg

½ cup breadcrumbs

1 tbsp olive oil

1 tsp smoked paprika

Salt and pepper to taste

4 tortillas or burger buns
Pickled Cherry Pepper Relish

½ cup pickled cherry peppers, chopped

2 tbsp red onion, finely diced

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp honey (optional)

Instructions

Heat olive oil in a skillet over medium heat and cook Lion’s Mane mushrooms until tender and lightly browned.

In a bowl, combine mushrooms, mashed beans, onion, garlic, egg, breadcrumbs, and spices.

Mix thoroughly and form into 4 patties.

Cook patties in a skillet for about 4 minutes per side until crispy and heated through.

In a small bowl, mix chopped cherry peppers, red onion, olive oil, vinegar, honey, and salt to create the relish.

Serve patties on buns and top with the pickled cherry pepper relish.
