Lion's Mane Black Bean Burger

A hearty, plant-forward burger featuring HENOSIS Lion’s Mane mushrooms with a rich, meaty texture.

Ingredients

Burger

  • 8 oz Lion’s Mane mushrooms, finely chopped

  • 1 can (15 oz) black beans, drained and mashed

  • ½ small onion, diced

  • 2 cloves garlic, minced

  • 1 egg

  • ½ cup breadcrumbs

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • 4 tortillas or burger buns

Pickled Cherry Pepper Relish

  • ½ cup pickled cherry peppers, chopped

  • 2 tbsp red onion, finely diced

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp honey (optional)

  • Pinch of salt

Instructions

  1. Heat olive oil in a skillet over medium heat and cook Lion’s Mane mushrooms until tender and lightly browned.

  2. In a bowl, combine mushrooms, mashed beans, onion, garlic, egg, breadcrumbs, and spices.

  3. Mix thoroughly and form into 4 patties.

  4. Cook patties in a skillet for about 4 minutes per side until crispy and heated through.

  5. In a small bowl, mix chopped cherry peppers, red onion, olive oil, vinegar, honey, and salt to create the relish.

  6. Serve patties on buns and top with the pickled cherry pepper relish.

Lion’s Mane mushrooms naturally mimic the texture of crab and meat, making them ideal for plant-based burgers and savory dishes.
